California Green Olives from our certified organic regeneratively grown small family farms are raw and fresh between August and October. The later season orders of raw fresh green olives that you order may already have started to fade to black. As these unripe olives advance to a ripe olive, they turn black. Our small and large green olives will fade with a purple tint. Many of our clients prefer to cure the green olives themselves for a fresher and often healthier option.
