 When walnuts are picked in the early season, they still have a little bit of moisture to them. Walnuts that you buy from the grocery store have gone through a lengthy drying process to extend their shelf life and to create a delicious crunch.  Wet walnuts, on the other hand, haven’t been through this drying process and are meant to be enjoyed in this green fresh state. Because of this, they are only available during the early harvest season. Wet walnuts from Handy Farms are available in September and October.
