Ingredients:
- 2 ½ pounds of potatoes
- ¼ cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper
Instructions:
- Preheat your oven to 425°F (220°C).
- Cut the potatoes into bite-sized chunks (about 1 ½” pieces) and place them in a large bowl.
- Drizzle the olive oil over the potatoes. Add the garlic, rosemary, and parsley. Season with salt and pepper. Toss everything together. Make sure the potatoes are evenly coated with oil and herbs.

4. Spread the potatoes out in a single layer on a baking sheet. If the potatoes are too crowded, they might not get as crispy.
5. Put the potatoes in the oven and roast for 20–25 minutes, flipping halfway through. When done, you can enjoy your golden, crispy potatoes!
